The Basque Cheesecake is an intentionally charred top cheesecake paying homage to La Viña in San Sebastian, Spain where 30+ years ago, Chef Tracy’s friend Gabriella gave the Basque chef owners a New York cheesecake recipe. They accidentally burnt it and created this masterpiece that since 2021 has gone viral worldwide.

Our PAGU version is a whole 10” round and comes with Maine blueberry sauce.
