Our delicious housemade croquetas with roasted black cod, caramelized onion, whipped potato, garlic confit.

To prepare: Heat neutral oil (e.g. canola, grapeseed) in a medium pot to 350f. Add croquetas gently (make sure there is enough oil to cover the croqueta) and cook until golden on the outside, and warm on the inside, 2-3 minutes. Remove on to a paper towel, season with sea salt and enjoy with thai chili alioli.

You can also reheat in an airfryer, preheated to 400f for 12-15 minutes until crispy and warm throughout.
